Roasted Lemon Chicken 6 servings

- 1 whole roasting chicken
- 1 lemon
- 1 cup Cucina Meyer Lemon Extra Virgin Olive Oil
- 3 teaspoons mustard powder
- Rinse chicken inside and out, pat dry.
- Cut lemon in half and rub one half all over the outside of the chicken.
- Squeeze the other half into measuring cup.
- Add the olive oil and mustard, then brush the chicken with this mixture.
- Roast in the oven following the directions on the chicken, basting periodically.
