Roasted Lemon Chicken 6 servings

• 1 whole roasting chicken
• 1 lemon
• 1 cup Cucina Meyer Lemon Extra Virgin Olive Oil
• 3 teaspoons mustard powder

1. Rinse chicken inside and out, pat dry.
2. Cut lemon in half and rub one half all over the outside of the chicken.
3. Squeeze the other half into measuring cup.
4. Add the olive oil and mustard, then brush the chicken with this mixture.
5. Roast in the oven following the directions on the chicken, basting periodically.
