Oatmeal Raisin Cookies24 servings

- 2 2/3 cups all-purpose flour
- 2 2/3 cups rolled oats or quick oats
- 1 cup packed brown sugar
- 1 cup white sugar
- 1 cup chopped nuts (optional)
- 1 cup raisins
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 3 teaspoons nutmeg
- 1/2 teaspoon Cucina Sea Salt
- 1 cup Cucina Hoji-Blanca Extra Virgin Olive Oil
- 1 cup egg substitute
- 2 teaspoons vanilla extract
- Preheat the oven to 350°F.
- Mix dry ingredients together in large bowl.
- Fold the oil, egg, and vanilla into the dry ingredients.
- Drop cookies by spoonful, 2 inches apart on a lightly greased cookie sheet.
- Bake for 11 to 13 minutes.
