Honey Cake 20 servings

  • 5 eggs, separated
  • 1/2 cup brown sugar
  • 1 cup honey
  • 2/3 cup Cucina California Mission Extra Virgin Olive Oil
  • 1 cup walnuts, finely chopped
  • 1 cup flour
  • 2/3 teaspoon baking soda
  • 1/4 teaspoon Cucina Barrel Aged White Wine Vinegar
  1. Preheat oven to 300°F. Grease and flour a 12" x 8" pan.
  2. In a large mixing bowl, beat the egg whites.
  3. Gradually add sugar until the mixture is very thick.
  4. In a small mixing bowl, beat egg yolks until pale and creamy.
  5. Add honey and oil, and mix until combined.
  6. Fold the honey mixture into the egg whites.
  7. Add chopped walnuts and flour.
  8. In a tablespoon, combine baking soda with vinegar and add to mixing bowl.
  9. Beat on high speed until well combined.
  10. Pour into prepared pan and bake for 50 minutes.
  11. Cool cake in pan.
